I Will Not Be Denied

The title of this post says it all: sure I’m trying to get healthy and whatever, but for better or worse, my sweet tooth will not be denied. That’s demonstrated to me (times twelve!) each and every month. So, to combat that sugar lovin’ baddie, I have, as you all know, been doing some serious research into healthier ways to get my fix.

Enter Chocolate Covered Katie. The things this girl can do with food–wow! Katie’s recipes are all healthy and mostly vegan. Thanks to her, I’ve found myself stuck in the kitchen, staring at a bag of dates and  jar of coconut oil, wondering, “now what?” I definitely think I’m going to need to make these Birthday Cake Reeses for my own upcoming birthday–I mean, a girl’s gotta do what a girl’s gotta do.

My slight obsesh with Katie’s blog started when I received a bag of delish Whole Foods Medjool dates as a gift–an odd, but awesome gift. I had seen Katie’s recipe for Peanut Butter Cookie Dough Cookies, and after a quick Twitter exchange with the Chocolate Covered goddess herself, I decided to try subbing in dates for the raisins her original recipe calls for.

The result was nothing short of delicious: peanut butter, almonds, walnuts, dates, and a dash of vanilla. Super simple, super addictive. And healthy!Here’s the link to Katie’s original recipe. Again, the only slight changes I made were to use dates instead of raisins, and I used a combination of walnuts and almonds instead of peanuts (only because that’s what I had in the cupboard).

Since those worked out so well, and I had more dates to use up, I gave Katie’s Hot Fudge Brownie Larabars a shot. Delish. Healthy. Barely made it a few days in my fridge–I mean, I may have even picked the crumbs out of the bottom of the bag.
